Ingredients:

1 lb. fresh filleted Rockfish
1 package Good Season’s Italian Dressing (mix package with oil, vinegar & water — as directed on package)
2 Tomatoes Sliced
Italian Bread Crumbs, Ritz Cracker Crumbs or Crushed Caesar Croutons (your preference)
Grated Parmesan Cheese

Directions:

Marinate Rockfish in Italian Dressing for an hour before cooking.
Broil Rockfish on foil on cookie sheet with marinade poured over top.
A couple of minutes before fish is done, lay tomato slices on top of fish and sprinkle Bread/Cracker Crumbs.
Sprinkle Parmesan Cheese and broil until golden brown.
