Mama Sylvia’s Micro Salmon

Ingredients:
1 salmon fillet (6 oz.)
1 medium ripe tomato, halved crosswise
1 red skinned new potato (pierced with fork)
1 tbsp. extra virgin olive oil
1 lemon, halved
Salt & pepper to taste
1 tbsp chopped fresh basil (or parsley)
Directions:
Place salmon, tomato halves and potato in microwavable dish. Drizzle olive oil and juice of ½ lemon over top. Sprinkle salt, pepper and ½ tbsp. basil (or parsley).
Cover & microwave for 4 minutes.
Sprinkle remaining basil (or parsley) & garnish with other ½ of lemon.
Yields: 1 serving
