Mary’s Holiday Crab Cake Appetizer

Ingredients:
12 oz. Crab meat
2 eggs, beaten
1 cup potato chips, finely crushed
4 tbsp. coconut, shredded/toasted
4 tbsp. green onion finely chopped
4 tbsp. mayo
2 tbsp. parsley, snipped
1 tsp. ground coriander
4 tbsp. cooking oil (or more)
Directions:
Combine all but crabmeat in large mixing bowl (except crabmeat). Once mixed add crabmeat. Make patties, and roll in potato chips. Cook in heated oil over medium heat, about 2-3 minutes per side (or until golden). Serve immediately or keep heated in warm oven for a bit. Serve with sauce.
Herb Sauce
½ cup mayo
2 tbsp cilantro
2 tbsp. milk
2 tsp. lemon peel, shredded
Combine all, cover & refrigerate for at least one hour.
