Ingredients:

2 lbs Filleted skinned Rockfish (striper)
1 box of McCormick “Fish ‘n Chips” Seafood Batter Mix
2/3 cup water OR ½ can beer
Vegetable Oil

Directions:

Cut rockfish fillets into 2 inch chunks.
Mix Batter with beer or water in a medium mixing bowl.
Heat oil in a skillet on medium-high heat.
Drop fish chunks one at a time into batter mixture, let excess batter drip off and drop into oil. You can fry several pieces at a time. Be careful, oil may splatter.
Allow to fry 3-5 minutes, turning once to brown evenly. Once fish is golden bown, remove from the oil and drain on paper towel.

This is the best fried fish ever!!!

Tartar sauce

1 cup mayo or lite mayo
4 tablespoons relish
1 teaspoon fresh lemon juice
Add pepper to taste

Mix all together and enjoy
